As a young boy growing up in Fiji, Fables Restaurant’s Executive Chef, Johnny Datt always knew he was born to be a chef. With a passion spurned early on watching his mother cooking over a wood fire, he has always strived to further his culinary skill set, and create a unique fusion of East meets West.
He recalls the first time he was hired as an apprentice chef at Naviti Ramada resort and had to learn a cooking style completely different to what he was used to. “Thrown into the maelstrom of the old style European kitchen, my first reaction was “What am I doing here? It took all my will power to stick it out.”
He is certainly glad that he did, with a slew of culinary experiences and achievements now under his chef’s belt. He has successfully opened 9 hotel restaurants over his career, and Mantra Legends have been lucky enough to have Johnny at the helm of the Fables Restaurant team for 18 years now.
He lists Prosper Montagné, the French chef as inspirational in the way he revolutionised the culinary art and made refinements to ancient techniques. However, on a more personal level, Johnny notes his mother as the main influence in his signature cooking style. Cooking over wood fire and the unique flavour it brings along with the freshness of herbs and spices is something he tries to infuse in his dishes at Fables Restaurant.
At the end of the day, Johnny’s biggest enjoyment in cooking is simply creating good food, that people relish the pleasure of eating.
