Head to Tetsuya's at 529 Kent Street to unlock the secrets of this famous chef. Tetsuya Wakuda hails from the Japanese town of Hamamatsu, moving to Australia in 1982. He quickly showed promise as a chef, and began to develop his own culinary style that blends French techniques with the Japanese philosophy of using natural and seasonal flavours and ingredients.
Head along to the restaurant to enjoy the 10-course degustation menu, from Tuesday to Friday for dinner and on Saturday for lunch and dinner. The Tetsuya experience is about more than just the food but also the whole atmosphere, with the restaurant in a heritage-listed site mixing Japanese and Classical decor. Cherish the peace of the Japanese garden, warm dining room or the bar, and enjoy the art and ceramics that decorate the premises.
The kind of flavours you can expect include chilled cucumber soup with sheep yoghurt ice cream, sashimi of kingfish, marinated New Zealand scampi with caviar and Tetsuya's signature dish, a confit of Petuna ocean trout served with konbu, celery and apple. Dessert is also mouthwatering, with the menu including morsels such as a sorbet of Pione grapes with summer pudding.
